Chapter I

Shari – How to Make Perfect Sushi Rice

鮨飯 (Sushi-meshi / Su-meshi)

The preparation of sushi rice, known as shari, sushi-meshi, or su-meshi, is the foundation of great sushi. Many sushi chefs believe the rice contributes up to 60% of the final taste. The key lies in properly mixing freshly cooked rice with the vinegar blend called awasezu.

Choosing the Right Rice

Japanese short-grain rice is essential for sushi. While famous varieties such as Koshihikari and Sasanishiki are highly regarded in Japan, slightly older rice is often preferred for sushi because it absorbs vinegar more effectively.

The most important factor is the rice's ability to absorb water and vinegar without becoming overly sticky. Many sushi restaurants blend fresh and aged rice to achieve the ideal balance.

How to Cook Sushi Rice

Washing the Rice

Rinse the rice several times with fresh water to remove excess starch and impurities. Gently rub the grains together while washing, then rinse again until the water becomes clearer.

Soaking

Add slightly less water than standard rice cooking proportions: approximately a 1 : 1.1 rice-to-water ratio.

  • Summer: soak for around 30 minutes
  • Winter: soak for 1 to 1.5 hours

Cooking

An electric rice cooker is the easiest and most reliable method. After cooking, let the rice steam for 10–15 minutes without opening the lid. This resting period greatly improves texture.

How to Make Nigiri Sushi by Hand

Moisten both hands with tezu, a diluted rice vinegar solution mixed with water. Take approximately 20–25 g of sushi rice and gently form an oval rice ball in your palm.

At the same time, pick up a slice of fish using your thumb and index finger.

Add Wasabi

Place a small amount of grated wasabi in the center of the fish slice. There is no need to spread it across the entire surface.

Combine Fish and Rice

Place the rice onto the fish. Press the center lightly with your thumb to introduce air inside the rice. This is one of the most important techniques in nigiri making.

Shape the Nigiri

Close your fingers gently around the nigiri and apply light pressure. The fish should adhere to the rice, but the rice should never become dense or compressed.

Perform "Tegaeshi"

Rotate the nigiri in your hands using the traditional Tegaeshi (hand-turning) method. This movement evenly shapes the sushi while maintaining the airy structure inside.

Finish shaping the nigiri with delicate pressure on each side. Traditional nigiri often takes a slightly boat-shaped form known as Funazoko ("ship-bottom" shape).

Continue rolling tightly until the exposed edge of the nori seals the roll.

Use the bamboo mat to gently compress the roll into a round or slightly square shape.

Using a very sharp knife lightly moistened with vinegar water, cut the sushi roll into 6–8 pieces.

Avoid sawing motions, press the blade down cleanly to preserve the shape of the roll.

How to Make Futomaki (Thick Sushi Rolls)

Futomaki are larger sushi rolls made with a full sheet of nori and a greater amount of rice and fillings.

The rolling process is almost identical to hosomaki, except the rice layer is thicker and several fillings are arranged together in the center.
