Chef's Note:
Unlike traditional cast iron, the Kyoto Katsugu pan undergoes a special nitriding process, making it extremely resistant to corrosion without the need for intense "pre-burning." The removable Oak handle not only provides a premium grip but allows the pan to double as an oven roasting dish. To maintain the natural non-stick surface, simply wash with warm water and apply a light coat of cooking oil after each use.
